
Fat Pork Chops with Braised Winter Veg
So I found a brand new Butchers and I feel a little like I’ve just cheated on someone. I have my regular butcher who is award winning and brilliant…..but this just kinda happened, it wasn’t planned and I’m not proud. No……I’m friggin’ over the moon!!!

And here is the fruits of this young union fat Pork Chops with Braised winter Veg!
Serves 2
2 Fat pork chops – butcher shop stylie
1/2 savoy cabbage (inner leaves) quartered
2 medium courgettes chopped into fat chunks
Handful spinach (not baby – big meaty spinach)
This is seriously swift – 30 minutes start to finish.
2-3 tps red pepper pesto
1/2 glass white wine
Kick off by seasoning the pork well with salt and pepper and a little red pepper pesto for a kick. Sling the veg into shallow baking tray, add a few glugs of olive oil and the white wine.
Foil the whole thing and sling into 3/4 tilt oven for 30 minutes – done.
