The Life and times of a Killer cook

Spag with Porcini and Spinach

When I was a kid my Dad would make Spag Bol and bring it to the table in the pan it was all cooked in……this used to horrify me as a 9 year old. Don’t ask me where my airs and graces at that tender age came from but it seriously bummed me out! My… Read More Spag with Porcini and Spinach

Spaghetti with Cavelo Nero and Porcini

There’s one huge pet hate I have when it comes to Italian food…..Italian food outside of Italy that is…..cream in pasta. I fucking hate it and eateries outside Italy continue to load some of the sauces with cream and in some cases…butter!!! The only thing butter and cream do in a pasta sauce is mask… Read More Spaghetti with Cavelo Nero and Porcini

The best Vongole

I have no beef with food that makes me work, in fact I prefer food that makes me think about it, examine it, and attack it even! Think about the humble Kebab, a really good, authentic Doner…. it’s not that easy to negotiate (especially when you share one with my super groovy Wife, Clare) but… Read More The best Vongole

Dora Macchitella’s incredible Minestrone

So, looking out the window, right now makes me want to pack a bag get on a plane and get as far away from this cold, wet, windy and damp Country as possible…….but that’s just a fleeting feeling, it soon melts into an appreciation for the fact that I’m inside with Louie our Spaniel/Lab mix,… Read More Dora Macchitella’s incredible Minestrone

Asparagus and Mushroom Rigantoni

This is a brilliant main dish, but I realised after I made it that it’s an even more brilliant starter. It’s dead simple but incredibly impressive as it’s jammed to the walls with flavour predominantly from the dried Porcinis and their soaking liquor. The inclusion of the asparagus tips just adds that cut through.

Who is this guy?

I like to describe myself as a pop-up chef - I'm not a planner - I stick my head in the fridge and see what I can do with whats staring back at me! Now this leads to disasters...which you will never hear about and spectacular miracles which you will. I'm not 'passionate' about cooking..that's the biggest cliche in the business. I am passionate about live and food is just one small part of it.
