These are my knives, do I need them all? No. Do I use them all…….a wee bit, but that’s only because I’m conscious I have them!
At most you need 3 knives in your kitchen set up, a big one, a small one and one with teeth (for bread).
The single most important aspect of your knife is keeping it sharp:
Keep in a drawer with other knifes etc – they will invariably blunt one another.
Stick it in the dishwasher, it will warp over time and go dull
Use on anything but wood or plastic chopping boards
Ever, ever, ever use those fucking hateful glass chopping boards!!!!
