Easy Soda Bread

Soda bread toasted on a Sunday morning is the bomb………especially when it comes with sausages, bacon, black pudding, mushrooms and 2 fried eggs crispy around the edges and runny in the middle.

This is the easiest bread in the world to make, no kneading required at all – in fact it’s a bad thing if you knead this bread so don’t!

1 loaf
500 grams white bread flour
1 tsp sugar
Good squirt of honey
1 tsp salt
1 tsp bicarbonate of soda – this is your rising agent instead of yeast.
350mls Buttermilk – give or take

Put all the dry ingredients into a deep bowl and mix well, mix the honey and butter milk and ad to the bowl with the dry ingredients – bring together with your fingers.

Don’t knead this as it will make it heavy – just bring it together in a big soft ball then flatten into what looks like a big round beer mat about 1 inch in height. Slash it with a knife in a cross fashion and then whack it in a really hot oven straight away – 25-35 minutes later and your done.

Get the bacon and eggs on.
