Clare’s Parsnip & Cumin soup

When it comes to soup I’m sadly lacking….but thankfully the only other person who interests me in the kitchen is a wizard at the soup……my wife Clare…..so today’s blog is post is from the soup queen šŸ˜‰

Well I don’t know about that, I think it is more a mix putting together foods I have a craving for and luck!

This week I had a mad craving for parsnip, being that it has turned cold and really feels like Winter, plus there were a few bits in the fridge to use up.

I started with a dash of oil and a small knob of butter in a larger saucepan. I added 2 large spring onions (any onions would be fine, these just needed to be used plus I have a real fondness for them) and softened them. I then added 3 small potatoes roughly peeled and chopped and a large parsnip peeled and roughly chopped to the same size.

After a few minutes or enough time for the veg to soften I added 2 teaspoons of cumin (I actually though it was curry powder only for Rory to tell me that the container marked ‘curry’ is actually full of cumin!! Plenty of fresh ground black pepper also goes in and a pinch of salt. Another good stir and then a good jug of chicken stock for dept of flavour.

I put the lid on and set the heat to a simmer and leave until everything is nice and soft. Then take it off the heat and blitz until smooth. I always do a taste test at this stage, mine needed more pepper and to be thinned down with a drop of hot water.

Add a sprinkle of freshly chopped parsley and add some nice bread and you have a lovely Winter warmer, which also makes me feel really festive.
