
OK, so I bang on about this pretty regularly but with good cause – get your produce from independent suppliers, you will never, ever regret it!
So on a recent road trip around Wales I spotted a little village butchers shop in Ludlow (which is across the border in England by the way) which was selling Welsh lamb steaks – I could not resist so bounced in and bought a few and I can honestly say this lamb is the best in the world barr none!!!
Good meat like this needs nothing but a little seasoning – in this case my own rosemary salt – and it’s grilled and served with home-made triple cooked chips.
Welsh Lamb Steaks – serves two
2 medium lamb steaks
For the rosemary salt:
2 tbs salt flakes
2-3 strips of fresh rosemary
For the marinade:
200 mls good olive oil
2 cloves minced garlic
Cracked black pepper to taste
Kick off with the rosemary salt – simple pluck the leaves from the twigs, combine with the salt flakes on a chopping board and run a sharp knife through the mix until you are left with a powder. You can then season the marinade with this and add to the steaks as they cook if required.
Next make up the simple lamb marinade – combine garlic, oil, rosemary salt and pepper, mix well and drop in the lamb steaks. Coat both steak well, cling and sling in the fridge for about 1-2 hours.
To finish – simple fire up you grill and hard cook the steaks for about 3-4 minutes on each side for medium (or longer if you want a well done steak). As the lamb cooks stick your finger into it and taste – simple add more rosemary salt to the lamb steaks should they need it.
The best way to serve these is with 3 times cooked home made chips
