Simply octopus, simply done

I love seafood specifically squid and octopus closely followed by crab, Gambas and lobster…all in that order!

I’ll never bend my head around some attitudes towards it being less then amazed…but hey, each to their own!

This is a simple recipe of boiled octopus served dressed with a killer dressing of oil, vinegar, white pepper and olive oil….that’s it, they way Neptune would have wanted it!

Serves 2

One whole baby octopus
100mls olive oil
2 cloves garlic minced
75mls white wine vinegar
White pepper
Salt to taste
Chopped parsley

So the real work starts with the octopus, your fish monger can clean
It and sort you out with just the tentacles if you wish.

Sling the octopus into salted boiling water for 90minutes…long slow cooking is what’s needed.

Remove the octopus and leave to cool to cold.

If you have the full octopus then remove the tentacles and chop into 1 inch pieces and sling into a bowl.

Finally make your dressing combining oil, vinegar, garlic and pepper then add to the octopus.

Dress well, season and serve with crusty bread and a big bodied white wine.
